Khoresh Bademjan – Persian Eggplant Stew
Found the cutest baby brinjals in my local Hemköp. Thought I’d make these Maharashtrian style but then my morning was taken over by meetings. Then I found this Persian recipe and it required very little prep time and the dish could be cooked on low heat while I did other things. Coincidentally I had forgotten a Lime on the kitchen counter a few weeks ago which had turned dried and hard, perfect as the dried limes needed in this stew.
Most recipes online made this dish using lamb, and the Vegan version suggested using Chickpeas. As I had neither, I used Tuvar Dal instead (split Pigeon Peas).
The overall effect was a tart, tomatoey stew with melt-in-your-mouth oven cooked Brinjals simmered in the stew.
