Green Beans and Asparagus Quiche

If I was ever in doubt of the delicate touch required in handling pastry dough, I have now been enlightened that I do not possess any such skill.

Heavy handedness with clumsy fingers results though in a very rustic looking pastry shell – at least that is the lie I am using to placate myself.

The pastry is shop bought. As I didn’t have any weights to blind bake, I used some nuts that I wanted to roast instead as the weights. Once the pastry dough was lined in the baking dish, covered it with butter paper and filled it with nuts, and into the oven at 180C it went for 15-20mins to cook the shell. (This is my Indian Juggadu at play.)

Whisked 3 eggs with salt, pepper and chilli flakes and then mixed in around 4 heaped tblspns of Greek yoghurt and a generous splash of oat milk. Added in some cooked green beans and asparagus heads cooked in garlic, some chopped cherry tomatoes, some chopped coriander leaves, some Parmesan cheese chunks and some chunks of Brie. Ladled the mix into the shell and cooked the quiche for around 50mins at 180C.
